Vegan Cheesy Scalloped Potatoes

3-5 organic russet potatoes (peeled, thinly sliced and washed)

1 c vegan milk

1/2 c nutritional yeast

1/4 c EVOO

1 1/2 T granulated garlic

1 T sea salt (to taste)

1/2 T black pepper

Preheat oven to 375-400* depending on your oven. In a casserole dish, toss the potatoes with all olive oil first and then add all the seasonings (saving a little nutritional yeast for the end), mix evenly. Add the milk to cover potato mix and add a the remaining nutritional yeast to get the cheesy flavor on top and make sure milk covers mixture. You know it is done when it browns and a fork sticks through easily. Enjoy!
