*all organic*
1 dozen dates
1 c unsweetened rice crisp cereal
1/2 c almond flour
1/2 c pistachio butter
1 c chocolate chips (or your favorite chocolate)
2 T maple syrup
2 tsp vanilla
Dash of salt
1/2 tsp coconut oil or olive oil
Add rice crisps, almond flour, pistachio butter, maple syrup, vanilla, and salt in one dish. Mash together to slightly break down rice crisps and still keep crunch-not too mashed. Make sure mixture is well stirred.
Set aside mixture.
Slice dates lengthwise on one side, keeping date intact. Remove the pits.
Stuff the center of dates with the mixture and close up and mold together.
In a double broiler, melt the chocolate and stir the oil in until smooth.
Have your dish or serving tray ready. You may line with waxed paper. Dip and roll each date until covered in chocolate. Set on tray/dish. Refrigerate until chocolate is solid. If in a hurry, you may put in the freezer.
These won’t last- so a double batch may be necessary.
These are an excellent gift or potluck dessert, as well as to have handy in the fridge for sweet treats.
