Vegan/GF Healthy Candy Bar

Think of Mr. Snickers marrying Ms. Twix and they have a healthy, nontoxic baby!! This little baby is delicious and good for you too!

INGREDIENTS:

Cookie bottom layer:

2 c almond flour

1/4 c coconut flour

7 T pure, real maple syrup

3 T olive oil

2 1/2 tsp vanilla extract

1/2 tsp sea salt

Caramel layer:

1 1/2 c dates (pitted)

1/2 c almond butter

1 tsp vanilla

pinch of sea salt

separate layer:

peanuts (chopped or halved)

topping

1 c chocolate (your favorite chocolate or chocolate chips)

1 tsp olive oil or coconut oil

Preheat oven to 350*degrees. Lightly oil a glass baking dish. (coconut oil or olive oil or vegan butter).

For the cookie layer, place all ingredients in a food processor until blended. Press batter into the dish, until evenly flattened and let bake until slightly browned.

The caramel layer will also be blended in the food processor. The dates should be pitted and soaked in hot water until softened.(doesn’t take more than 7 minutes).Add all the caramel ingredients into the food processor-(EXCEPT FOR THE PEANUTS) until creamy.Spread this layer onto the cookie base.

Next layer, just add the peanuts all over the caramel.

In a double broiler (or just boil a small amount of water in a small pan) and put the chocolate chips in a bowl on top of the pan/double broiler with a tsp of olive oil or coconut oil and stir until creamy. You may drizzle or spread over the top.

Refrigerate for an hour or so, and then cut into bite size pieces or bars.

As always, I use all organic ingredients. If you don’t have that access, the peanuts should always be organic, or you can substitute another type of nut.

This is great for kids, satisfying a sweet tooth, gifts or to take to a potluck.
